Q: While vacationing in Mexico we were given a dish of chicken, black beans, rice and a flour tortilla shell.

The heat of this past week has me reminiscing about the many years I lived in Tucson, Arizona. It was in Tucson where I learned how wonderful "real" Mexican can be. Up until my time in Arizona, I had a very limited understanding, at best, of what Mexican food really was.

While California has now become an incredible culinary melting pot, I can remember a time, not too long ago (circa 1970), when the only Mexican food game in town was the El Torito restaurant on Ventura Boulevard in Encino, and even then, it was an exotic evening out for dinner (and to enjoy the ducks in the park behind the restaurant). It was either that or a dubious looking Swanson's frozen dinner version of Mexican food.
